History
The origins of Ajinomoto date back to 1908, when Japanese chemist Kikunae Ikeda discovered that the savory taste characteristic of kombu (kelp) broth was derived from the amino acid glutamate. Ikeda identified this sensation as a distinct basic taste, naming it umami, which is now scientifically recognized alongside sweet, sour, salty, and bitter flavors.
To make this flavor accessible to consumers, Ikeda developed a method for producing monosodium glutamate (MSG) and patented the process. In collaboration with entrepreneur Saburosuke Suzuki II, the seasoning AJI-NO-MOTO® was launched in 1909, marking the official founding of the Ajinomoto Company. The name “Ajinomoto” translates roughly to “Essence of Taste” or “Origin of Flavor.”
